The Spirit

Mezcal El Silencio is a premium “joven” 100% Agave blend or “ensemble”. Using only the finest and carefully selected 10-12 year old Agave, it is handmade in small batches to be smooth, elegant, and delightfully complex.

Our joven "silver" Mezcal combines the aroma of sundried vegetables, leather, dried fruit, and sweet smoke, becoming the first choice of both connoisseurs and social drinkers alike. El Silencio is a sipping Mezcal, yet mixes flawlessly into hand crafted cocktails. Each bottle is individually labeled, numbered, and signed by our Master Mezcalier.

The Blend

The Story

El Silencio is an artisanal Mezcal hand crafted in San Baltazar Guelavila, Oaxaca by Master Mezcalier Pedro Hernández, a ninth-generation “Maestro Mezcalero”.

As an organic Mezcal, El Silencio's production does not involve any additives or industrial processes. The result is a craft spirit of the highest quality with an infinite range of flavors, dimensions, and character.

An Artisanal Process

Harvesting The Agave

  • When the plant is fully matured,
  • at about eight to ten years.
  • Only the pineapple shaped heart remains.

The Cooking

  • After chopped to pieces
  • its then cooked in a stone pit anchored in the ground.
  • The cooking duration is at least for three full days.

The Tahona Grind

  • The shrapnel remains are split again
  • and put to a grinding stone (Tahona), pulled by a horse

Fermentation

  • In combination with Spring Water
  • The fermentation process is what evolves out of their natural sweetness
  • The mixture "mosto" or "agave wine" begins to generate its own alcohol.

Copper Distillation

  • In the "alambique" is where the alcohol is vaporized
  • and the "elixir" is transformed into Mezcal.

    *Cranberry Syrup: Combine equal parts granulated sugar and unsweetened, cranberry juice and stir until dissolved.
    *Honey Syrup: 3 parts honey to 1 part hot water
    *Ginger Syrup:1 part ginger juice to 1 part granulated sugar.
